Cook & Chill & Hold - The process CONVO

With its brands and CONVOChill CONVOHold Convotherm offers all components of CONVO process provided by the same manufacturer. CONVO The process consists of phases Cook ( = production of food in the combi oven ) , Chill ( = rapid cooling of food products) and Hold ( = after regeneration dishes , they are maintained at the desired operating temperature ) . All ovenmen carts are obviously compatible with each other !

 

 

Step 1 : Cook

Thanks to the Advanced Closed System , prepared foods are cooked and their qualities are especially preserved in the mixed Convotherm oven. Vitamins and minerals are entirely preserved .

 

 

 

 

 

 

 

Step 2: Cooling or freezing fast

Precooked foods are rapidly cooled to the desired temperature in the CONVOChill . It is possible to store food for a period of 72 hours .

 

 

 

 

 

 

 

Step 3 Portioning and regenerate

Refrigerated foods can then be creatively presented on plates then be regenerated in the carriage plate banquet pushed around in the mixed Convotherm oven.

 

 

 

 

 

 

 

Step 4: Keeping warm and Service

Hot plates are pushed with the carriage plates banquet in CONVOHold . The desired dishes and maintained for 90 minutes without loss of quality temperature.
